Oatmeal Pecan Waffles

  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs - beaten
  • 2 cups milk
  • 1/4 cup butter - melted
  • 2 Tablespoons honey
  • 1 cup quick-cooking oats
  • 1 cup finely chopped pecans (walnuts work great too)
Preheat your waffle iron.

In a large bowl, mix together both flours with the baking powder and salt.

In a separate medium bowl, stir together the beaten eggs, milk, melted butter and honey.

Add wet ingredients to dry ingredients and mix until just mixed and moistened. Fold in the oats and the nuts.

Bake according to the instructions for your particular waffle maker.


These have a lot more texture, personality and flavor than regular waffles. Please note that this recipe is for standard waffle makers not Belgium.
