Maple Apple Oatmeal

  • 3 cups apple juice
  • 1 and 1/2 cups old fashioned oats
  • 1/2 cup chopped fresh or dried apple
  • 1/4 cup pure maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)
In a medium saucepan, bring the apple juice to a boil. Add the oats, apples, syrup and spices and allow mixture to return to a boil. Reduce the heat to medium-low and cook uncovered for 5 minutes - stirring occasionally - until most of the juice is absorbed.

Remove from heat and stir in nuts if desired. Allow oatmeal to set 5 minutes before serving.


You can use water instead of apple juice or a mixture of the two. But the juice gives this oatmeal an overall apple flavor I think you'll like. Enjoy!

If I make it again it'll be with water rather than with apple juice; that just made it much too sweet, even when eaten with milk.
