Scrumptious Strawberry Muffins
(6 servings) Printable Version
- 1 and 1/2 cups whole-wheat flour
- 1 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- 1 large egg
- 1/2 cup low-fat or skim milk
- 12 large strawberries - sliced
- 1/4 cup honey
Spray muffin pan with cooking spray or line with paper muffin cups.
Divide batter equally among muffin compartments. Bake at 350 degrees Fahrenheit for 25 minutes.
Makes 6 regular muffins or 4 large muffins.
Each regular-sized muffin contains about 175 calories and 5 grams of fiber.

Sorry, but this is nasty. Mushy and just eww!

Hmmm... These had good flavor but they turned out mushy! I don't think frozen strawberries work well, I'm going to try it one more time with fresh strawberries but if it turns out mushy (it was like oatmeal mushy!) then this recipe is ewy! Too bad, though, it looked good.

Wow this was very bland and if I made it again I would probably add more milk and some vanilla because it is a very heavy muffin.
