Cheese And Bacon Biscuits

  • 2 slices of bacon - cooked and crumbled
  • 4 Tablespoons butter - softened
  • 1 egg yolk
  • 1/2 cup shredded Cheddar cheese
  • 2/3 cup all-purpose flour
  • 1 pinch salt
  • 1/8 teaspoon dry mustard - optional
In a small glass or metal bowl, beat butter until creamy. Add the egg yolk and mix until well-combined. Add 1/2 of the cheese a stir to mix. Sift in the flour, salt and dry mustard. Continue to mix until a firm dough forms. Wrap in the dough in plastic wrap and refrigerate for at least 30 minutes.

Preheat oven to 325 degrees.

Roll the dough out on a lightly floured surface to 1/8 inch thick. Cut into 2-inch diameter rounds (I use a small juice glass as a cutter).

Place the rounds on a lightly greased cookie sheet. Sprinkle each with crumbled bacon and the remaining cheese.

Bake for 10 to 12 minutes until biscuits are golden brown.

Let the biscuits set at least 5 minutes before serving.


A great side dish with omelets and other egg dishes. Also popular in our house as a snack for poker night.

Made 4 pretty large biscuits. Good flavor. But a little too tender to use them for breakfast sandwiches. Good on their own, though.

Kind of crumbly, but the flavor was awesome. Went great with scrambled eggs.
