Toasted Coconut Waffles

  • 1/2 cup sweetened flaked coconut
  • 1 and 1/2 cups canned unsweetened coconut milk
  • 6 Tablespoons butter - melted
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
First, toast the coconut by spreading it out over an an ungreased cooking sheet and toasting it in the oven at 350 degrees until golden and slightly browned on the edges - about 10 minutes (but make sure to keep an eye on it). Remove from oven and set aside.

Preheat waffle iron according to manufacturer's instructions.

In a medium bowl, whisk together the coconut milk, melted butter and eggs.

In a separate large bowl, mix together the flour, baking powder and salt. Add wet ingredients and toasted coconut to the dry mixture and stir until just combined. Try not to over-mix.

Cook according to the waffle iron's instructions.

Serve with maple syrup, jam or honey.

I had a really hard time with these pancakes. They did not really rise and I added the baking powder after all the other ingredients. It feels like there is not enough flour as the waffles are very custardy. However, the flavor is very good.
