Tofu Waffles

Tofu Waffles

  • 1/2 pound soft silken tofu
  • 1 and 1/2 cups low-fat milk
  • 2 and 1/2 Tablespoons vegetable oil
  • 2 teaspoons vanilla
  • 1/4 teaspoon almond extract
  • 1 teaspoon grated orange rind
  • 1 and 1/2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 4 teaspoons baking powder
  • 2 egg whites - beaten until stiff peaks form
In a large bowl, mix together the tofu, milk, vegetable oil, vanilla, almond extract, and orange rind. Beat until smooth.

In a separate large bowl, combine the flour, salt, cinnamon, nutmeg and baking powder.

Add wet ingredients to dry ingredients. Mix until just combined. Fold in the beaten egg whites.

Bake according to waffle iron instructions.


Lots of flavor. Soft inside texture. Crispy edges.

I'm interested in this recipe, but I'd like to understand the point of using the tofu. Does it add flavor or texture? It doesn't seem to make these dairy-free or wheat-free or anything. Just wondering.

I made this w/ vegan substitutes (flaxseed 4 egg sub., and soy flour 4 milk. It turned out tasty.
