Open-Face Pizza Omelette II

  • 2 eggs - beaten
  • 1/4 cup milk
  • salt and pepper - to taste
  • 1/2 teaspoon dry oregano and basil
  • 1/4 cup marinara sauce
  • 1/3 cup mozzarella cheese
Combine eggs and milk, salt and pepper.

Spray non stick pan with cooking spray.

Add eggs, and herbs and cook over med-low heat, covered, until eggs are mostly set.

Heat sauce in microwave until warm.

Flip eggs over (DO NOT FOLD) and cook other side for 30 seconds. You want it to look like a whole pizza pie.

Add sauce and cheese, cover and turn off heat and cook until cheese is melted. (There is plenty of residual heat in the pan to finish the cooking and melt the cheese.)


If you want it to really be an authentic pizza, you can serve it on a warmed pita, flatbread or tortilla so it has a crust.
