Rum Raisin French Toast

  • 4 slices raisin bread (day-old bread works best)
  • 2 large eggs
  • 1/4 cup milk
  • 4 Tablespoons quality dark rum
  • 1/8 teaspoon ground nutmeg
  • 1 and 1/4 Tablespoons butter
In a large shallow bowl, beat the eggs vigorously. Whisk in the milk, rum and nutmeg. Place all four pieces of bread in the egg mixture and let them soak for about 5 minutes.

Heat the butter in a heavy, nonstick skillet. When the skillet is very hot (but not smoking), place the pieces of soaked bread on it and fry until golden brown. Flip them and repeat on the other side.

Serve with butter and pure maple syrup.


Great for the holidays... or for regular days that you want to feel like a holiday. You can replace the milk with eggnog if you have it too!
