Farmer's Omelet Frittata

  • 3 Tablespoons vegetable oil
  • 1/2 cup green onion - chopped
  • 3 and 1/2 cups frozen hash browns
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 large eggs - beaten
  • 1 red pepper - chopped
  • 1 and 1/4 cup milk
  • 1 cup Swiss cheese - chopped
Preheat oven to 400 degrees. Heat a large skillet. Add oil. When oil has warmed, add potatoes. Add green onion, sprinkle with salt and pepper and cook until soft. Beat eggs and milk together.

Remove pie plate. Top with pepper, then cheese and lastly egg and milk mixture. Bake 45-50 minutes until set and golden. Cool slightly and cut.


Served with toast and homemade jelly, this frittata is a favorite with guests at The Fish Creek House Bed and Breakfast in Whitehall MT.

I suggest baking the crust until it starts to brown and adding the onion in with the egg. When you bake it, cover it loosely with aluminum foil. When you do that the crust is a little bit crispy and it's a lot better.
