Trail Mix Energy Bars

  • 1/4 cup whole wheat flour
  • 1/4 cup wheat bran
  • 1/4 cup oats
  • 1/4 cup Splenda
  • 1/4 cup flax seeds (optional)
  • 1/2 teaspoon baking powder
  • pinch of salt
  • 1 large egg
  • 1/2 cup skim milk
  • 2 Tablespoons butter
  • 2 Tablespoons honey
  • 1 bag (12 ounces) fruit and nut trail mix
Preheat oven to 425 degrees.


Place all dry ingredients in a medium mixing bowl and mix well.

Whisk egg and milk until well blended. Then, melt butter and honey together in the microwave.

Make a well in the dry ingredients; add egg/milk and honey/butter mixtures. Stir until well blended. Add entire bag of trail mix and stir until evenly coated.

Pour mixture into a lightly greased 8x8 square pan and spread evenly. Bake at 425 degrees for 15-20 minutes until golden brown and toothpick inserted in center comes out clean.


You can cut this into whatever size bars you would like. I cut it into fourths for meal-sized bars. Believe me: they have real staying power! Enjoy!

Recipe is great, but yes... I would never use artificial sweetener, it makes your body crave sweets even more because it doesn't satisfy our sweet tooth to begin with - use real sugar, or brown sugar!

Anything with Splenda in it is not healthy, you are better off using sugar. Your body knows what it is and it is natural. Splenda destroys your health more than sugar does and it is made in a lab. Sorry, I felt obligated to comment - seeing Splenda in a recipe section listed 'healthy' - Certified Holistic Health Counselor.
