  • 4 to 6 ounces lemon yogurt
  • 1/4 cup chunk pineapple - drained
  • 1/4 cup granola
  • 1 teaspoon sugar - if desired
  • 1 Tablespoon coconut flakes
This was super fast and really good. I have a couple recommendations. 1) Avoid using a granola with chewy fruit like raisins. I did and the raisins got in the way of the overall texture. The granola should provide a nice crunch. 2) If you have it or have the time to make it, toasted coconut is better than plain coconut in this parfait. 3) If I make this again, I'll add a sliced banana to the mix. Beyond that, this is what it is: A tasty fruit parfait with a tropical feel. (This recipe was submitted in 2005. It was tested and photographed in March 2014.)

How To Make A Tropical Parfait

Combine yogurt and sugar. Alternate layers of yogurt, granola and pineapple (or mix it all together at once for still tasty treat!).

Top with granola and coconut flakes.
