Monster Habanero Omelette

Monster Habanero Omelette

(2 servings)    Printable Version
  • 4 large eggs
  • 1 Habanero pepper
  • 2 jalepeno peppers
  • 1/4 cup diced green and red pepper (mixed)
  • 1 slice American cheese
  • 8 ounce hash browns - cooked crisp
  • 2 or 3 slices of bacon
Beat eggs until completely even. Cut up the habanero and jalapenos into the smallest pieces possible and mix with the green and red pepper.

Butter a pan on medium heat. Add the eggs and let even out. Immediately add the pepper mix and hash browns and let sink into eggs.

When the edges of the eggs start to solidify, break up cheese and distribute evenly. Fold it, however and let cook until eggs are fully done. Enjoy!

Note: For a more blended taste, consider sauteing the pepper mix (until softened) and using that in the omelette.

This omelette has some serious heat thanks to both Habanero and jalapeno peppers. Bacon and American cheese help round out the flavor.

Spicy and awesome. Even better with Pepper Jack cheese. Next time, I'm even adding spicy sausage. If you can't tell already... I love me some spicy food!

Dice potatoes and onions and cook in olive oil until they start to turn brown then add the eggs and chopped habanero and continue to cook until the eggs are done. Add a little garlic if you like.
