Spaghetti Noodle Omelet

  • 2 cups cooked spaghetti noodles
  • 4 large eggs
  • 1 Tablespoon olive oil
  • 3/4 cup grated mozzarella cheese
  • 1/4 cup grated parmesan cheese
In a small cup or bowl, beat eggs.

In a large bowl, combine pasta and beaten eggs.

Heat olive oil in a large skillet at medium-high heat.

Place half of the pasta in the heated skillet. Spread to cover width of pan with spatula. Spinkle evenly with grated cheeses. Cook until bottom is browned. Cover with remaining spaghetti.

Carefully, slide omelet onto a plate and flip the omelet back into the skillet to cook the other side. Cook until remaining side is browned.

Serve on its own or with a dollop of spaghetti sauce.


Great use for leftover spaghetti noodles. Fun for kids.

Kind of fun. A little weird, but definitely tasty. I though it tasted like more of a dinner thing than a breakfast thing.
