Buttermilk Chocolate, PB & Butterscotch Pancakes

  • 1/2 cup all-purpose flour and 1/2 cup whole wheat flour
  • 1 Tbsp. granulated sugar or maple sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 2 Tbsp Powdered Buttermilk or 1/4 Cup real buttermilk
  • 1/2 tsp. salt
  • 1 egg
  • beaten
  • 1 cup water
  • 2 Tbsp. vegetable oil
In large mixing bowl stir together dry ingredients, mix in chocolate chips, peanutbutter chips & butterscotch chips.

In separate bowl beate egg, water and oil, then blend in with dry ingredients until batter is smooth. Do not overbeat. Drop from a spoon onto a hot, greased griddle and cook until top is full of tiny bubbles and the underside is brown.

Turn and brown on other side.

Makes 4 large or 6 small-medium pancakes.


I use maple sugar and powdered buttermilk as I usually have these items on hand. The texture and flavor of the mix cooks up quite nice. The chips add a nice flavor. Top with your syrup of choice, or are good as is. Enjoy!

Ummm... we seem to be missing chocolate, butterscotch and peanut butter chips in the ingredient list for quantities.
