Pecan Oatmeal Pancakes

  • 1 cup low-fat Bisquick baking mix
  • 1 cup milk
  • 1/4 cup pecans - coarsely chopped
  • 2 large eggs
  • 2 packets of cinnamon or apple instant oatmeal
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon butter
  • 2 dashes salt
  • butter or cooking spray for frying
In a small frying pan, toast the pecans in butter until they get golden brown and and you get that great aroma of roasted nuts.

In a medium mixing bowl, combine the milk, oatmeal, eggs, vanilla, cinnamon and salt. Alllow to set for a couple minutes until airbubbles dissapate.

Add the baking mix and pecans to the oatmeal mixture. Mix well and let it set until air bubbles dissapate.

Ladle onto a hot (medium-high) griddle using about a quarter cup of batter per pancake. Turn when batter in the center begins to bubble and the edges are dry.


Great with maple syrup and butter or just a pat of butter. My kid would also suggest peanut butter.

This is an excellent pancake to serve guests. The aroma is sweet and nutty and they taste delicious! I prefer them with 1/4 c. of quick oats to the instant oatmeal. Sausage patties are the perfect meat to serve with them. They are on the hearty side but not heavy.
