Cajun Oven Home Fries

  • 6 large red-skinned potatoes
  • 1/4 cup olive oil
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon Cajun seasoning or 2 teaspoons chili powder
  • salt - to taste
Peel the potatoes and cut them into 1/2-inch pieces.

Preheat oven to 400 degrees F.

Cook potatoes in medium pot of boiling salted water until slightly tender - about 5 minutes. Drain well. Spread potatoes on heavy large baking sheet. Sprinkle with paprika, chili powder and Creole seasoning.

Season with salt. Drizzle olive oil over potatoes and stir to coat.

Bake about 40 minutes until potatoes until browned and crisp - turning with metal spatula every 10 minutes while cooking.


Quality potatoes equal quality home fries. Add some spices and that equals maximum taste. Great to have with any egg dish.

That was easy and AMAZING. Took 30 minutes (not 40) in the oven to get brown and crisp.

Super tasty compliment to the candied bacon. I boiled the potatoes for 10 min instead of 5 and only baked them for 15 min, turning them at the halfway point. For the last 2 min, I turned the oven up to broil. Everything turned out perfect! Thanks!
