Pineapple Syrup

  • 1 cup pineapple juice
  • 1/2 cup sugar
  • juice from 1/2 lemon
  • 2 Tablespoons sherry
  • 1 Tablespoon cornstarch
  • 1 Tablespoon butter - softened
In a heavy saucepan , bring juices and sugar to a boil. Mix in cornstarch and sherry. Stir sauce until thick and clear. Stir in butter. Pour over pancakes.

This pineapple syrup has a tropical flavor with a hint of citrus. Great for French toast, especially with whipped cream and a sprinkle of toasted coconut.
