Apple Pancake Pie

  • 2 Granny Smith Apples - peeled / cored / sliced in 1/4 inch pieces
  • 3 large eggs
  • 1/2 cup milk
  • 1/2 cup all-purpose flour
  • 1/2 cup unsalted butter - cut into 2 1/4-cup pieces
  • 1/4 cup sugar
  • 1/3 teaspoon ground cinnamon
  • 1 teaspoon grated lemon zest
Preheat the oven to 450 degrees and set out a deep 10-inch ovenproof skillet.

In a small bowl, mix the granulated sugar with the cinnamon and set aside.

In a medium-sized bowl, lightly whisk the eggs, milk and lemon zest. Blend in the flour just until mixed.

In the skillet - on stove top, melt 1/4 cup of the butter over medium heat. Add the apples and saute for 5 minutes or until tender. Pour the egg batter over the apples and transfer the skillet to the oven.

Bake for 20 minutes -- until the apples are tender and the pie rises.

Meanwhile, melt the remaining 1/4 cup butter. Remove the skillet from the oven, drizzle the pie with the butter and sprinkle with the cinnamon-sugar mixture.

Return the pie to the oven for 5 minutes or until the sugar mixture is bubbly. Sprinkle with a little confectioners' sugar and serve immediately, right from the skillet.


As beautiful to look at as to eat. A family favorite. Requires an oven-proof skillet.

This recipe is awesome! At first I was concerned about the sweetness factor, considering the batter doesn't have any sugar, but the apples sweeten this pancake pie up perfectly! It doesn't even need the cinnamon sugar on top! Wonderful, wonderful, wonderful!

I agree. Very good recipe. Depends a lot on the flavor of the apples. I tossed the apple pieces in a little more sugar because they were a little tart.
