Grape Nuts Orange Muffins

  • 2 cups all-purpose flour - sifted
  • 2/3 cups sugar
  • 2 teaspoons baking powder
  • 2 large eggs - beaten
  • 3/4 cups of orange juice
  • grated rind of 1 orange
  • 2 Tablespoons butter - melted
  • 1 cup Grape Nuts cereal
Sift flour once, measure, add baking powder and sugar, and sift again.

In a separate bowl, combine eggs, orange juice and rind and butter. Add to flour - beating only enough to dampen all flour. Add Grape Nuts.

Bake in greased muffin tins 20-25 minutes at 425 degrees.


Yummy, unique and full of orange flavor. The cereal gives these muffins a great texture.

We had a restaurant years ago (over 50 years ago), and my father made these every other day to be served with the dinners. Of course his batch was huge and he used the whole orange. They were the best I have ever had. Thanks for cutting the recipe down to manageable amounts.

I did not have orange juice so I used peach juice and diced peaches. They were moist and tasted good.

Jessica's recipe is a winner. I had my doubts... worried that the muffins would be crunchy and strange. But the texture was great and the cereal added a nutty flavor that I loved. And my husband also approves. Thanks for a great recipe!
