Super Carrot Muffins

  • 1 cup oat bran
  • 1 cup whole wheat flour
  • 1 Tablespoon arrowroot powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/3 cup maple syrup
  • 1 cup water
  • 1/4 cup canola oil
  • 2/3 cup grated carrots
  • 1 teaspoon all-spice
  • 1/2 teaspoon cinnamon
Preheat oven to 275 degrees. Prepare 12 muffin cups by spraying generously with cooking spray or lining with muffin cups.

Combine dry ingredients. Next combine all wet ingredients and then mix well with dry ingredients. Pour into prepared muffin cups and bake at 375 for 25 to 30 minutes, or until a toothpick inserted into the center of a muffin comes out dry.


Hearty and healthy muffins made with whole wheat flour and oat bran. The flavor comes from grated carrots, maple syrup, cinnamon and all-spice.

I double the amount of carrots as a great way to get a bit more veggies in my diet. No changes required with the baking instructions.

These are absolutely wonderful muffins! No eggs or milk and a whole cup of bran! I actually substituted wheat germ for the bran which contributes lots of B Vitamins. I think next time I'll put in equal parts flour, germ and bran to really get a fresh whole grain component. I also played around with adding some grated coconut and I didn't have arrowroot so I used tapioca flour instead with perfect results. I love this recipe! It's so versatile, healthy and the maple syrup makes it just perfectly sweet without refined sugar. Thank you!

This recipe is wonderful! They are so moist and tasty and yet healthy. I make them frequently and have even substituted bananas for carrots at times.
