Three Grain Butter Pastery

  • 1/2 cup yellow cornmeal
  • 1/2 cup rolled oats (not instant) or oat flour
  • 1 and 1/2 cups unbleached flour
  • 1/2 teaspoon salt
  • 14 Tablespoons cold unsalted butter - cut into 1/4-inch pieces
  • 1 egg yolk
  • about 4 Tablespoons ice-cold water
Put cornmeal and oats into blender and pulse machine on and off until oat flakes are reduced to small flakes. Transfer to large mixing bowl and add flour and salt. Cut in the butter.

Beat egg yolk with 3 Tablespoons of the water. Sprinkle liquid over dry mixture, working mixture with a fork; push on it with the tines to pack it. If still dry add 1 more Tablespoon of the water, this time packing it with your hands.

Shape pastry into a rectangle about 1/2-inch thick. Wrap in plastic wrap and chill.

Bake at 400 degrees until toothpick inserted in the center comes out clean. Slice into pieces.


This pastry is sliced like a loaf of bread and goes very well egg dishes for breakfast instead of plain old regular toast.
