Grzybek ze Sloninka (Poland)

  • 1/4 pound bacon
  • 4 large eggs
  • 10 soda crackers
  • 1 rounded Tablespoon flour
  • 1/4 cup water
  • 1/4 cup milk
  • 1 Tablespoon chopped chives
  • slices of thin white bread
Cut bacon into small pieces and fry until crisp. Break eggs into a bowl. Add seasonings, crushed soda crackers, flour, water, and milk. Mix thoroughly with a spoon. Pour over hot fried bacon (leave all bacon fat in pan) and cook very slowly until almost done. Sprinkle chopped chives over top and cover with slices of bread. Let cook very slowly until the eggs are set. Cut into wedge shaped pieces and serve immediately.


Grzybek ze Sloninka means "mushroom with bacon" and is pronounced "guh_JI-beck zeh swo-NIN-cone".
