Blintzes With Fruit Topping

  • 1 package (3 ounce) cream cheese - softened
  • 1 cup ricotta cheese
  • 1 large egg
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon almond extract
  • 1 package (4.5 ounce) ready-to-use crepes
  • 1 tablespoon butter - melted

  • For The Topping:
  • 2 tablespoons orange juice
  • 1 tablespoon cornstarch
  • 2 boxes (10 ounces each) frozen Deluxe Mixed Fruit - thawed
In food processor, place cream cheese, ricotta, egg, sugar, and almond extract; blend until smooth.

Mound or pipe 2 heaping tablespoons cheese mixture down center of crepe. Fold sides around filling and place in 9x13 - inch greased pan.

Brush tops with melted butter.

Bake in preheated 400°F oven for about 10 minutes.

Heat over medium heat until mixture thickens and bubbles; stirring constantly

Serve over warm crepes.



Fruit topping:

Mix together orange juice and cornstarch in small bowl then place in saucepan; add fruit.


A great breakfast with a mixed fruit and orange juice topping. Requires crepes from the grocery store or ones made from your favorite recipe.

I am a Chef for a retirement community and we all love the blintzes. They are a little tedious to make for 200 people, but well worth the time and effort. They have a great almond smell and flavor for inside the crepe. The fruit topping makes the dish come alive in your mouth!
