This is also great with regular bacon or spicy crumbled breakfast sausage (cook both before adding). If I do sausage, I also replace the Cheddar cheese with Pepper Jack.

Just made this recipe and it was awful. It didn't cook and when it finally did, the cheese was like chewing on a brick and the hash browns were a mess of freezer burned mush. Flavorless and just plain bad!

Great casserole! The peppers and onion made it taste fresh. I used a full 2 cups (whole bag) of cheese. Probably don't need that much next time. It was super cheesy, but also super good.

Great recipe! Instead of mushrooms, we used onion (the wife hates mushrooms), and it was great!
