Overnight Egg-Sausage Bake

  • 1 cup Bisquick or similar baking mix
  • 1 cup shredded Cheddar cheese
  • 2 cups milk
  • 1 teaspoon ground mustard
  • 1/2 teaspoon dried oregano leaves
  • 6 large eggs - slightly beaten
  • 1 pound bulk pork sausage - cooked and drained
This is a super easy breakfast casserole. Once you cook and crumble the sausage, it's just a matter of mixing all the ingredients together and waiting until morning... dreaming about the hot breakfast waiting for you. I found it more convenient to put the ingredients in the casserole dish to chill overnight... as opposed to keeping it in a bowl and transferring to a baking dish later. The Sausage Bake you see here cooked for exactly one hour. Overall: Easy and delicious. (This recipe was submitted in 2002. It was tested and photographed in May 2014.)

How To Make An Overnight Egg-Sausage Bake

Mix all ingredients together in a large bowl. Cover and refrigerate at least 8 hours but no longer than 24 hours.

Preheat oven to 350 degrees F. Grease a two-quart casserole dish. Pour egg mixture into the prepared baking dish.

Bake uncovered about 1 hour or until knife inserted in center comes out clean.

Cooking Notes:
You can use any shredded cheese or combination of cheeses. Pepper Jack cheese is especially good. If you like things cheesy, consider increasing the amount of cheese to 1 and 1/2 cups.

I have made this dish several times different ways. With sauteed onions and bell peppers, a pound of bacon, or turkey sausage. I've also used smoked Gouda cheese and Cheddar. Every time... excellent dish.

I used spicy sausage and added a finely chopped fresh jalapeno and a pinch of paprika. If you like a little spice in your morning, try my adjustments. It was great.
