Bran Muffins

Bran Muffins

  • 1 (20 oz.) box of Bran Cereal
  • 5 cups all-purpose flour
  • 4 cups sugar
  • 4 teaspoons baking soda
  • 2 teaspoons salt
  • 4 large eggs - beaten
  • 1 cup oil
  • 1 quart buttermilk
  • 1 Tablespoon cinnamon
Mix in large container with wooden spoon. Cover and refrigerate overnight. Bake at 400 for 12 to 15 minutes.

You can also make bread with the batter, just use a loaf pan instead of muffin tins. Cooking time is about the same, but check it after 10 minutes.


The easiest bran muffin recipe I think you'll find. You can refrigerate the mix up to 6 weeks.

I have been making a similar recipe for years, the main difference being it calls for 2 cups sugar instead of 4. Two makes them plenty sweet enough for me.

@Merri... Don't know if you have tried these Muffins yet, but I find they make about 60 normal size. A lot - but since they can be refrigerated for 6 weeks, it is easy to have fresh ones when you want. Also, I have made them up and froze them for months. Just remove what you want and microwave for a little bit. I do 15 to 20 seconds for one. They are excellent! - Camie
