  • 1 and 1/2 cups milk
  • 1 egg
  • 2 Tablespoons canola oil
  • 1 and 1/2 cups all-purpose flour
  • 3 Tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 apples - cored and diced

Place all ingredients in the blender. Blend a few seconds, until batter is mixed and apples are chopped fine. Pour batter from blender container onto hot, lightly greased griddle. Brown on both sides and serve with syrup, whipped cream or sour cream sprinkled with brown sugar.

The book has a quaint 60's charm with tons of recipes you can prepare in a blender ranging from Crab Meat Dip to Beef Stroganoff to Avocado Lemon Sherbet.

For our purposes, the book has a few pancake and waffle batters that you can make in the blender. It's true that the blender is good for convenience and helps keep clean-up to a minimum. However, the blender method has drawbacks, so please see the notes below. According to the book, these pancakes are "an excellent choice for a brunch."

Cooking Notes:

These pancakes tasted great, but the texture was lacking.

I had to add almost 3/4 more cup of flour to get a consistency that I liked. Keep flour nearby as you blend and add more flour a couple Tablespoons at a time until you get a consistency like eggnog or paint.

I can only recommend this recipe if your doing it for convenience or the fun of making breakfast in the blender. The fact is that the blender over-mixes the batter resulting in a more crepe-like texture. Don't expect fluffy pancakes from this recipe.

If you've got the time, make a non-blender pancake instead. You can find several great pancake recipes here. For fluffy pancakes, hand mixing is your best bet. The golden rule of mixing pancake batter is 1) mix your dry ingredients; 2) mix your wet ingredients; and 3) combine the wet ingredients and dry ingredients gently until well combined.

For this recipe, you don't get a lot of bubbles on the top to tell you when to turn the pancakes over. Look for the first couple of bubbles to form and the edges to appear dry. Check the underside. If golden brown, flip.
