
Sunny-Sunny Corn Muffin
(6 servings) Printable Version
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/2 cup sugar
- 4 teaspoons baking powder
- 1 large egg
- 1/2 teaspoon vanilla
- 1 cup milk (or 1 10-oz. can creamed corn)
- 1/4 cup vegetable oil
Pour batter into a greased 8-inch square pan or greased muffin tin. Bake at 350 degrees for approx 20-25 minutes. Serve warm with butter or covered with creamed chicken, fish, or meat.
I got this recipe from my mother but she (incorrectly) never thought it was a breakfast dish. She'd serve it with dinner and used to call it corn bread.

I added regular corn and they were very good. I will use less sugar when I make them next time, though.

Thanks. I've been looking for a basic recipe to make savory muffins. I cut back the sugar to a quarter cup. Very good.

Mmm.. not bad. Looks as good as it tastes. Made 2 batches: 1 with milk and 1 with corn... delicious! Brought it to school everyday. Never get tired of it. It is practically a family recipe now!

Love these muffins using corn rather than milk.... also add a few chopped jalepeno's for some spice... yummy!

Is there a recipe for corn muffins that doesn't include regular white flour. I'm trying to stay away from white flour. It would be nice if you had a recipe that would include alternatives to the ingredients listed.

Very, very good I used the corn instead of the milk. How about some nutritional info though, my partner is diabetic. I can figure it I guess (1 med muffin 15 carbs), but it would be nice if you had done it. A great recipie for breakfast or dinner.
