Jelly Roll Pancakes

  • 1 cup all-purpose flour
  • 1 and 1/2 teaspoon baking powder
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup low-fat milk
  • 2 Tablespoons canola or vegetable oil
  • 1/3 cup of your favorite jelly or jam
In a large mixing bowl, mix together the flour, baking powder, sugar and salt.

In a medium bowl, beat the egg with the milk and oil.

Add the wet mixture to the dry mixture and stir until just combined and moistened.

Make the pancakes as you normally would: Using a non-stock frying pan or griddle set at medium-high heat, dollop the batter in 1/4 cup portions per pancake. Cook until the tops are covered in bubbles. Flip and cook other side to golden brown.

Allow pancakes to cool enough to handle. Spread about 2 teaspoons of jam over the top of each pancake. Roll them up and place them on serving plates with the seam-side down.

If desired, sprinkle a little powdered sugar over the roll-ups.

AKA Jelly Pancake Roll-Ups. My daughter's favorite. I make the pancakes and she puts on the jam and rolls them up. Fun and delicious!
