Perfect Granola

  • 7 cups quick cooking or Old Fashioned oats
  • 1 cup all-purpose flour
  • 1 cup shredded coconut
  • 1 cup slivered almonds
  • 1/2 cup water
  • 1/2 cup vegetable or canola oil
  • 1/2 cup date syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/2 cup raisins or other dried fruit - optional
Mix together first four dry ingredients. Mix remaining ingredients (except dried fruit) together and then add quickly and thoroughly to dry mixture. Press firmly into two 9 x 13 pans.

Bake overnight at lowest temperature. Let cool completely before serving. Add dried fruit at this point if adding it. Store in an airtight container.


This granola with almonds, coconut and raisins is sweetened with date syrup. A little flour in the mix helps make crunchy clusters.

To get the flour, don't use wheat flour - instead, put rolled oats in your coffee grinder and make oat flour. You will achieve the same results and have a healthier granola. Good recipe though!
