Peanut Butter Granola Mini Bars

  • 1/2 cup reduced fat peanut butter
  • 1/3 cup honey
  • 1 egg
  • 2 Tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 3 1/2 cups old-fashioned oats
  • 1/2 cup brown sugar
  • 3/4 teaspoon salt
  • 1/3 cup peanut butter chips
  • 1/3 cup miniature semi-sweet chocolate chips
  • butter or cooking spray to grease baking pan
In a large bowl, beat the peanut butter, honey, egg, oil, and vanilla until blended. Combine the oats, brown sugar and salt, then add to the peanut butter mix. Stir in the chips and combine well. Note - this will be very sticky.

Grease a 13x9 inch baking pan with butter or cooking spray. Transfer the granola mixture and pat down with your hands or the back of a spoon until smooth. Bake at 350 degrees for 12-15 minutes until edges begin to brown.

Cool slightly on a wire rack (5-10 min.) Be sure to cut into bars (approx 1 inch by 3 inches) while the mixture is still slightly warm. Store in a zip lock bag once completely cool.


Each mini granola bar has approx. 100 calories and 4 grams of fat.
