Puckered Englishman (Baked Pineapple)

  • 1 20-ounce can cubed pineapple (drain off 1/2 of the juice)
  • 1/2 cup melted butter
  • 5 slices white bread
  • 4 large eggs
  • 3/4 cup sugar
  • 2 Tablespoons flour
  • 1/8 teaspoon salt
  • 1/8 teaspoon cinnamon
Prepare a 9x9 baking dish with a generous coating of cooking spray.

Preheat oven to 350 degrees.

Remove the crusts from the bread slices, discard the crusts and cut the bread into small cubes. Combine the bread cubes and butter in a medium bowl and gently stir coat pieces completely.

In a separate medium bowl, beat the eggs. Add the sugar, flour, salt and cinnamon and whisk until well combined. Add the pineapple cubes and toss them in the egg mixture.

Spoon the pineapple mixture into the prepared baking dish. Top with the buttered bread cubes.

Bake for 30 minutes until firm.

Allow dish to cool at least 15 minutes before cutting into serving-sized squares.


For a nice treat, top each serving with a small dollop of whipped cream or ice cream. I believe this is called Puckered Englishman because you can use English muffins instead of bread... but it's better with white bread.

I made this for the first time & it is really good. I think it would be even better without any sugar added, as the pineapple is sweet enough. I used sourdough white hoagie rolls cut up with scissors. It was a hit at the office.
