Tropical Fruit Compote

  • 1/2 cup water
  • 1/2 cup sugar
  • 1 teaspoon grated lime rind
  • 1 teaspoon grated orange rind
  • 3 oranges - separated into sections
  • 1 mango - chopped into cubes
  • 1 papaya - chopped into cubes
  • 2 medium red grapefruits - separated into sections
In a small sauce pan over high heat, bring the water to a boil. Add the sugar and stir until it dissolves. Turn off the heat and add the rinds. Allow mixture to cool to room temperature. Strain the mixture through a fine sieve, discarding any solids.

In a large bowl, mix together the fruit pieces. Drizzle the sugar syrup over the fruit and toss gently to mix.


You can also add grapes, pineapple chunks, strawberries or any of your favorite fruits.
