Pina Colada Breakfast Parfait

  • 1 6-ounces container of low-fat vanilla yogurt
  • 1/4 cup crushed canned pineapple
  • 1/4 cup canned mandarin oranges
  • 1 Tablespoon toasted coconut
* To toast coconut, either spread on a baking sheet and cook for 10 minutes at 350 degrees stirring occasionally until golden brown OR toast in an ungreased frying pan over medium heat, stirring often until browned and fragrant.

Dollop the yogurt into a serving dish or glass. Top with pineapple and oranges. Sprinkle toasted coconut over the top.

This is a very easy way to make a fresh tasting, healthy breakfast. It also works great as a snack or a dessert.
