Baked Eggs With Cheese

  • 4 large eggs
  • 3 cups milk
  • 2 cups grated sharp cheese
  • 2 cups soft bread crumbs
  • 1 teaspoon salt
  • 1 Tablespoon finely chopped parsley
  • 1 Tablespoon Worcestershire
Preheat oven to 350 degrees. Grease a 1 and 1/2 quart casserole dish.

Beat the eggs until light. Add remainder of ingredients in the order given. Mix well. Pour into prepared casserole dish. Set in pan of water. Bake until firm, about 50 minutes to an hour.

Garnish with additional parsley. Makes 4 to 6 servings.

 This recipe is from the classic cookbook titled Minnie Pearl Cooks (Minnie Pearl, Nicholstone Bookbindery, 1970).

Minnie Pearl was a country comedienne who was famous for her appearances at the Grand Ole Opry and on the TV show Hee Haw. Minnie's actual name was Sarah Ophelia Colley Cannon.

Her cook book is chuck-full of good county cookin' recipes which includes a nice variety of breakfast dishes.


This is a baked egg and cheese breakfast casserole from legendary Grand Ole Opry and Hee Haw star Minnie Pearl. Worcestershire sauce and parsley give it a unique flavor.

The bread crumbs are an interesting touch. It's like other baked egg casseroles I've made, but the texture is firmer. It's good.
