Green Eggs & Ham

  • 3 large eggs - scrambled
  • 1/4 cup diced ham
  • 1/4 cup diced tomato
  • 1 Tablespoon minced garlic
  • 1/4 cup grated Parmesan
  • 2 Tablespoons basil pesto
  • 3 Tablespoons white wine
  • 2 Tablespoons butter
  • 1 Tablespoon minced parsley - optional.
In a none stick pan combine butter, garlic & ham. Saute over med heat until garlic is golden. Add wine to deglaze. Toss in pesto, mix thoroughly. Add eggs and tomato. Stir until eggs are almost done, add most of the cheese, set aside a tablespoon for garnish. Stir until melted. Plate. Top with extra cheese and minced parsley for garnish.

My own twist on Dr. Suess's classic. I have used this recipe in three breakfast restaurants I have cooked in and it has been a best seller. Best if using fresh pesto.
