Breakfast Capellini

  • 2 Tablespoons sweet butter
  • 1/2 pound capellini or angel hair pasta - cooked and tossed with olive oil
  • 4 egg whites
  • 1/4 cup chopped pimento pepper
  • 1/4 cup chopped parsley
  • 1/2 cup minced prosciutto or other ham
  • 1/4 cup grated Parmesan cheese
Heat the butter in a skillet over medium heat. Add the cooked pasta. Add the egg whites. Cook for 2 minutes - stirring often. Add all remaining ingredients and toss thoroughly.


Hi Mr. Breakfast - I found this recipe in an old cookbook called "More Recipes from Hour Magazine" by Gary Collins. It seemed really unique and I didn't find anything like it on your site. I hope you like it. Your friend, Debbie D.

Made this today as part of a big breakfast meal plan. I used gluten free spaghetti noodles, don't think they make angel hair. This was extremely tasty! My hubby doesn't usually like much pasta, he doesn't like red sauce. So this was a pasta he enjoyed! I served it with easy ambrosia, jam bars and Morning Pink Lemonade - which I found on this site too.
