Breakfast Capellini

(2 servings)

  • 2 Tablespoons sweet butter
  • 1/2 pound capellini or angel hair pasta - cooked and tossed with olive oil
  • 4 egg whites
  • 1/4 cup chopped pimento pepper
  • 1/4 cup chopped parsley
  • 1/2 cup minced prosciutto or other ham
  • 1/4 cup grated Parmesan cheese
Heat the butter in a skillet over medium heat. Add the cooked pasta. Add the egg whites. Cook for 2 minutes - stirring often. Add all remaining ingredients and toss thoroughly.
