Applcado Pudding

  • 2 avocados
  • 2 of your favorite kind of apples (not green)
  • 2 teaspoons lemon juice
  • water (to desired consistency)
Peel and pit avocados. Place in food processor.

If desired, peel apples (I like to leave the skins on mine for a nice red/green combo). Slice apples in half from the top down and use a melon baller to remove seeds. Cut into large chunks and place on top of avocados.

Sprinkle lemon juice over fruits and begin pureeing. Add a little water at a time, until desired consistency is reached (go slowly - the longer it blends the smoother it becomes, even with only a little water). I like to stop when mine reaches a yogurt or mousse consistency.

Serve on its own like a pudding (or mousse), or over your favorite granola or over fruit!

Makes about 2 cups; store in airtight container or jar in fridge for up to 2 days.


Avocados ARE fruit and they CAN be made into something other than guacamole. I like to use this instead of yogurt. Add more lemon juice if you like the 'twang' as I call it. It's not that weird - I promise!
