Chili-Cheese Breakfast
(4 servings) Printable Version
- 5 large eggs
- 1/4 cup flour
- 8 oz cottage cheese
- 4 oz diced green chilies
- 2 Tablespoons butter - melted
- 1 teaspoon baking powder
- 1 cup shredded Cheddar cheese
- 1 cup shredded Pepper Jack cheese
ADD butter-baking powder-cheeses. Stir well.
POUR into 9-inch greased pie pan.
BAKE 400 degrees for 10 minutes - reduce to 350 degrees for 20-25 minutes or until set
SERVE with warm salsa and sour cream on the side. May be assembled the night before and baked in AM.
It's easy, cheesy and it has a spicy kick from green chilies. This breakfast casserole is always a hit.

It's wonderful, comes together quickly, and with a little extra cheddar on top, it's colorful too. Great with fresh chopped tomatoes on top. It's a keeper.
