Chili-Cheese Breakfast

(4 servings)

  • 5 large eggs
  • 1/4 cup flour
  • 8 oz cottage cheese
  • 4 oz diced green chilies
  • 2 Tablespoons butter - melted
  • 1 teaspoon baking powder
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Pepper Jack cheese
COMBINE eggs-flour-cottage cheese-green chilies. Mix on medium with mixer.

ADD butter-baking powder-cheeses. Stir well.

POUR into 9-inch greased pie pan.

BAKE 400 degrees for 10 minutes - reduce to 350 degrees for 20-25 minutes or until set

SERVE with warm salsa and sour cream on the side. May be assembled the night before and baked in AM.


It's easy, cheesy and it has a spicy kick from green chilies. This breakfast casserole is always a hit.
