Froot Loops Muffins

  • 2 and 1/4 cups all-purpose flour
  • 2 Tablespoons sugar
  • 1 Tablespoon baking powder
  • 1/4 teaspoon salt
  • 3 cups Froot Loops cereal
  • 1 and 1/2 cups fruit punch (or apple juice)
  • 1 large egg
  • 3 Tablespoon vegetable oil
Prepare 12 muffin cups with cooking spray or muffin papers.

Preheat oven to 400 degrees.

In a medium bowl, combine flour, sugar, baking powder and salt.

In a separate large bowl, mix the cereal and fruit punch and let it stand until the cereal softens (about 3 minutes). Add egg whites and the oil and mix until well combined.

Add the flour mixture to the cereal mixture and stir until well combined.

Dollop batter into prepared muffin cups so they are about 2/3 to 3/4 full.

Bake 15 to 20 minutes until a toothpick inserted in the center of a muffin comes out clean. If batter sticks to the toothpick, give it another few minutes.


Using breakfast to make breakfast - genius! Experiment with other cereals to make your own personal muffin.

Going to try it with Apple Jacks cereal instead.

Definitely muffin-y but not nearly as fruity as I was expecting. Very bland. Also, I was a little confused as the ingredients list "1 egg" but the directions say to "add egg whites" - I used one whole egg and it seemed okay, but you might want to change it to whichever it was supposed to be.
