Crockpot Apple Butter

- 6 pounds apples
- 3 cups fresh apple cider
- 2 and 1/2 cups sugar
- 1 Tablespoon cinnamon
- 1 teaspoon allspice (optional)
This recipe makes about 5 pints of apple butter.
Wash apples and cut them in quarters. You don't need to peel or core them.
In large, heavy pot, cook the apples in 3 cups of cider over medium heat as you would for applesauce (don't add water). When the apples are soft, put them through a strainer. You should end up with about 13 cups of applesauce.
Cook the applesauce in a Crock Pot on high for 3 hours, then overnight on low.
In the morning, turn the Crock Pot to high again. Add the sugar and spices. Cook until your reach your desired thickness - usually about another 3 hours depending on your Crock Pot.
Serve with cottage cheese, pan-fried crispy scrapple or on toast. You can use this the same way you might use any jam or preserve.
This beats commercial apple butter by a mile! While the process isn't quick, I would classify it as being simple. The Crock Pot does most of the work.
