Mexican Tortilla Scramble
(2 servings) Printable Version
- 4 large eggs
- 1/2 fresh jalapeno finely chopped
- 1/4 cup chopped onion
- 2 tortillas - cut into small pieces
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup shredded Cheddar cheese
- 3 or 4 Tablespoons re-fried beans - optional
- lettuce - as desired
- salsa - to taste
In a lightly greased frying pan over medium heat, warm the tortilla pieces for about 2 minutes - stirring often. Add the egg mixture. Cover with 1/2 of the cheese and begin scrambling. Keep scrambling until the eggs are completely set.
Top each serving with the remaining cheese, a bit of shredded lettuce, the remaining chopped jalapeno and salsa to taste.
Cooking Notes:
This is a pretty cheesy recipe. I'll sometimes use just Cheddar or the combination of cheeses in the ingredients. Goat cheese is also delicious and easy to add. I listed the beans as optional, but I highly recommend them. They're not used very much in scrambles, but they add a real authentic Mexican flavor that I love.
To make this deluxe, crumble and brown some sausage and scramble that into the eggs too. Top with a dollop of sour cream and it's kind of like breakfast nachos.
Sort of a nachos of scrambled eggs. As a matter of fact, you could skip the tortillas in the recipe and serve the scramble over tortilla chips.

We make kind of a trashy yet super delicious version of this where we use Frito corn chips instead of tortillas. It's really good. You should try it sometime.

Made something like that... jalapeno cheese, ham, American cheese, 5 eggs and tortilla chips.
