Banana Ham Toast
(4 servings) Printable Version
- 4 slices whole-wheat bread
- a little butter for spreading
- 4 slices of pre-cooked cooked ham (or Canadian bacon)
- 1/2 lemon
- 2 medium ripe bananas
- 4 slices of American cheese
- chopped chives for garnish
Cut the bananas into 1/2 inch medallions.
Toast the bread and spread on a little bit of butter.
Cut each ham slice in half and place 1 piece on each toast.
Sprinkle with lemmon.
Take half of the banana medallions and place even amounts of bananas on each toast. Top each toast with remaining ham and sprinkle with a bit more lemon juice. Top with remaining bananas and cover each toast with a slice of American cheese.
Transfer toasts to an ungreased cookie sheet and bake for 3 to 5 minutes until cheese melts.
Spinkle each serving with chives if desires.
When my friend Jenny Lawler made this for me, I thought she was CRAZY! But now I make it myself and love it. It's sort of an ecclectic poor man's banana benedict.

While I am desperate for breakfast ideas, this one is not going in my recipe collection. The flavors do not go well together. Maybe with a different cheese.

I've been telling my mates about this for years! But they never believed me. Haven't tried it with lemon yet though. You've gotta try this!!
