Sunshine Morning (Granola)

  • 2 cups quick-cooking or Old Fashioned oats - uncooked
  • 1/3 cup honey
  • 1/4 cup chopped pecans (optional)
  • 2 tablespoons vegetable oil
  • 2 teaspoons grated orange peel
  • 1 teaspoon vanilla
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt (optional)
  • 2/3 cup diced dried mixed fruit (about 3 ounces)
This is a hearty, filling granola with a flowery, kinda-silly name. I used dates for my diced dried fruit. I also double the amount of vanilla and used melted butter instead of oil. It turned out really good. The granola was crunchy and it was cool how some of the oats stuck to the date pieces to form fruity clusters. I would definitely make this again. (This recipe was submitted in 2002. It was tested and photographed in June 2014.)

How To Make Sunshine Morning (Granola)

Heat oven to 350 degrees F.

Combine all ingredients except dried fruit in large bowl; mix well.

Spread evenly in 15x10" jelly roll pan or 13x9" baking pan. Bake 20 to 25 minutes or until golden brown, stirring once after 10 minutes. Cool completely in pan. Stir in dried fruit.

Store tightly covered up to 5 days.

The secret ingredient in this granola is grated orange peel. It adds a surprising citrus brightness that's nice to wake up to.
