Cowboy Frittata

Cowboy Frittata

(6 servings)    Printable Version
  • 6 large eggs
  • 1/2 cup milk
  • 2 Tablespoon butter - melted and cooled
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup green onions - chopped
  • 5 strips bacon - cooked and crumbled
  • 1 cup (4 oz) shredded Cheddar cheese
Yee Ha Pardners! This was pretty dang good. I used regular onion instead of green onion and I added a Tablespoon of chopped cilantro, but those were the only changes I made. I'd suggest skipping the salt. I found that the bacon provided all the salt you need. While I really liked this dish, I could see how it would be easily improved by adding a bit more flavor... like a couple Tablespoons of chopped bell pepper or diced jalapenos (for spice lovers). Bottom Line: It was easy, satisfying and filling. The bacon flavor was great. Giddy Up! (This recipe was submitted in 2006. It was tested and photographed in January 2017.)

So I adjusted this recipe considerably, but still had outstanding results. I substituted crumbled sausage for the bacon, eliminated the butter, added a little salt and pepper, added tomatoes and a finely chopped poblano pepper (no seeds or veins). My wife said I should never make a 'traditional' frittata with potatoes ever again, and my guests were similarly satisfied! Thanks for the terrific idea.
