Wheaties Pancakes

(2 servings)    Printable Version
  • 1 cup Wheaties or similar cereal - slightly crushed
  • 1 cup milk
  • 1/2 to 3/4 cup all-purpose flour
  • 2 large eggs - beaten
  • 1 Tablespoon sugar
  • 1 Tablespoon butter - softened
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
In a large bowl, combine all ingredients. Use enough flour to make a thin batter.

Heat a greased griddle or skillet to medium heat. Dollop batter onto hot surface in 1/3 cup amounts to make each pancake.

Cook until bubbles start to appear in batter and edges look dry. Flip and cook another minute or two until other side is golden brown.

Serve with butter and your favorite pancake topping.

I used whole wheat flour and non fat milk with this recipe and they came out wonderful. Everyone loved them. Hearty and healthy.
