Quick Homemade Granola

  • 3 cups regular rolled oats
  • 1/2 cup sliced almonds
  • 1/2 cup dried apple or dried fruit of choice
  • 6 Tablespoons apple juice concentrate - unsweetened
  • 3 Tablespoons hot water
  • 2 Tablespoons brown sugar
  • 1 Tablespoon cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon orange zest
Preheat oven to 300 degrees.

In a large bowl, combine oats, almonds, lemon and orange zest, cinnamon, brown sugar and salt.

Add apple juice concentrate and water and mix well. Spread mix on parchment-lined cookie tray and bake afor 30 minutes until golden, stirring every 10 minutes to bake evenly.

Remove from oven and cool completely. Stir in dried fruit.

Great as a dry snack or with milk for breakfast. Stores well in sealed Tupperware for a week.
