Cranberry Granola

Cranberry Granola

(10 servings)    Printable Version
  • 4 cups rolled oats
  • 1 cup dried cranberries
  • 1 cup honey (a little more if you have a sweet tooth)
  • 1 cup wheat germ
  • 1/2 cup chopped almonds
  • 1/2 cup chopped walnuts
  • 1/3 cup vegetable oil
  • 1 and 1/2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
Preheat the oven to 300 degrees.

In a large bowl, stir together the oats, wheat germ, nuts, and dried cranberries.

In a medium sauce pan at medium heat, stir together the oil, honey, vanilla and cinnamon. Heat until just warm and well combined.

Drizzle warm wet mixture over the dry ingredients and stir to coat evenly. Spread the mixture out in a thin layer on an ungreased cookie sheet.

Bake for 30 to 40 minutes - stirring every 10 minutes to toast evenly. Allow to cool completely before serving or storing in an airtight container. Granola will become crunchy as it cools.

Great as a snack or as a cereal with milk. We usually have a bowl out during the holidays as pre-feast snack food. Enjoy!

A good basic recipe, very easy and not overly time-consuming to make, tastes good but needs more fruit and nuts than the recipe says. Make sure to use good-quality honey as the honey is important for the flavor.
